It's mid-winter here in Iowa and I'm longing for the warmth to come in a few months. I like to make recipes that bring me to the summer mindset sometimes, to break up the monotony of winter.

This is one of those recipes. Simple and delicious. I'm notorious for eating the whole bowl, if I'm not reminded that it's for everyone. I'll make this easy salad to go with burgers or brat patties that I cook in my favorite pan.
A lot of cucumber salads have a heavy coating of mayonnaise-based dressing. While, sometimes I like this, I prefer this lighter version more frequently. It adds a lot of flavor, without overwhelming the cucumber. If you prefer a thicker dressing, cut down on the amount of lemon juice in the dressing.
Summery Dill Cucumber Salad
Tip: Prepare the dressing advance, if possible, to give the flavors more time to develop. I think this is a must! You may want to just double the recipe, also, as I'm sure it'll become a favorite of yours, too!

1/3 c. Greek yogurt
1/3 c. sour cream
1½ T. fresh lemon juice
1 T. fresh dill, finely chopped
½ t. garlic powder
Salt and black pepper, to taste
2 large cucumbers, sliced and cut into half rounds
½ medium red onion, sliced thin
1 T. fresh dill, roughly chopped
- Prepare the dressing by whisking all of the ingredients together in a medium bowl until thoroughly combined. Taste and adjust seasonings as desired. Set aside.
- Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl. Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!
